Every November, the Salon du BON fills the Grande Halle de la Villette with 170 hand-picked exhibitors —producers, craftspeople and committed brands— alongside around thirty chefs cooking live in front of visitors. Co-founded by chef Thierry Marx and BON magazine, the fair spreads across the halle's 19,000 sqm through six themed areas: food, drinks, tableware, equipment, accessories and a stage devoted to exceptional produce. The programme blends tastings, masterclasses, cooking demonstrations and talks on sustainable eating and short supply chains. Le Bouillon du BON, a pop-up restaurant modelled on the 18th-century Parisian bouillons, serves three sittings a day using ingredients sourced from the exhibitors themselves. Friday opens with a morning reserved for trade visitors —buyers, restaurateurs, distributors and trainers— before the doors open to the general public. Launched in 2023, the fair has become a fixture for France's conscious food scene.
